Blue Zones Project Coachella and City of Coachella Celebrate First Healthy Food

COACHELLA — Fat Boy Tacos & Catering is the city’s first approved Healthy Food Truck, as recognized by Blue Zones Project Coachella. An approval celebration will be held Saturday, Nov. 15 at 10 a.m. at Veterans Park in Downtown Coachella during the Fiestas Azules celebration.

Working with the City of Coachella, Riverside University Health System, and Blue Zones Project Coachella, Ordinances 1218 and 1219 were passed to expand access to nutritious meals and support local vendors.
Ordinance 1218 set the framework by designating parks and downtown areas for food trucks that commit to making at least 25% of their menu meet the Blue Zones Food Guidelines. That means more seasonal fruits and vegetables, whole grains, beans, nuts, and plant-based oils—and fewer fried, sugary, or ultra-processed foods. Ordinance 1219 builds on that momentum by allowing healthy food trucks to operate at local date farms, expanding access to nutritious options across the city. Fat Boy Tacos & Catering is the first to bring this vision to life.
“I began eating better and setting realistic goals. I started with tiny steps like adding more vegetables, and juicing and I slowly saw the changes mentally and physically. Being a caterer motivated me more to implement a healthier options menu to offer to our guests and customers to show them we can do more than just tacos. Being a part of the city’s Healthy Food Truck Initiative along with Blue Zones Project Coachella gives me the opportunity to tell my story to the community and be proof that making small dietary changes can change your life for the better,” said Cesar Sanchez co-owner of Fat Boy Tacos & Catering.
